Chinese Cinnamon Cassia

A small amount of a third type, cassia vera, produced mainly in Java, Celebes and other neighbouring islands, is exported mainly from Makassar, the German Federal Republic being the chief importers.

In the USA, spice millers cut selected pieces of the three types of cassia bark into short lengths for sale as ‘whole cinnamon’. The great bulk of the cassias imported is ground to produce ‘ground cassia- cinnamon’. The various kinds of cassia bark are different in flavour and degree of aroma, but all are agreeable, fragrant and aromatic. Saigon cassia is generally acknowledged to possess the fullest and finest flavour and it is the preferred type in the USA. The various types are ground separately or blended to meet the needs of the bakery and food- processing industries, being used directly in the ground form or for oleoresin extraction. Ground cassias are sold for domestic culinary use, usually without distinction as to type, under the label of ‘cassia- cinnamon’.

Kwantung cassia has an oil content of at least 1.7 ml per 100 g, and Kwangsi 3.4 to 4.0 ml per 100 g, according to information provided in 1974 by the Native Product Corporation, Peking (via the British Embassy). This contrasts with Landes (1951), who reported that best quality Kwangsi cassia contained 2 to 2.75 per cent volatile oil and Kwantung 1.0 to 1.2 per cent.

The spices are prepared and supplied to the market in various forms, the most elaborate type of product being the compound cinnamon quills from Sri Lanka.

The harvesting and preparation of cinnamon in Sri Lanka is generally undertaken for a farmer by contract peelers, usually a group of two families. Sufficient material is cut for a day’s peeling, the working day being from about 6 a.m. to 7 p.m. Stems, measuring 1.2-5.0 cm in diameter, are cut early in the morning and the twigs and leaves are detached; the last may be retained for distillation purposes. The cut stems are then bundled and are transported by bullock cart to the peeling shed.

The peeling operation consists of stripping the bark and preparing quills of 42 ins. length (just over 1 m) from the inner bark.

Perhaps the finest thing about the dahlia is its internationalism, for the varieties grown in this country originated all over the world. This is probably equally true of nearly every other dahlia growing country. This means of course that there are an enormous number of varieties available, but has also meant that the standards of quality have risen greatly over the years.

Modern varieties, without doubt, are really wonderful, both in formation and in the period and length of blooming. The majority of giant varieties have originated overseas, although we have several raisers of these varieties within the confines of the British Isles, notably that doyen of the dahlia, Mr Harry Stredwick, whose giants are famous the world over.

Australia and America in particular have produced some really wonderful varieties which are to be seen in every keen grower’s garden. The medium and small varieties, up to a few years ago, were, in the main, of native origin, but of late years we have seen a gradual influx of varieties from other countries. Holland, in particular, is responsible for a really wonderful range of medium cactus which have literally revolutionised this very attractive section. But France, Germany, South Africa, Australia and the Iron Curtain countries, plus a whole host of other nations, have all sent varieties which are grown enthusiastically, so that it is perhaps invidious to even imply that any country excels in this particular phase.

Although the dahlia is capable of almost infinite variations of form and size, the types that have evolved at any particular point in time have always followed the popular ideas of the day. Nowadays growers seem to have a much more catholic taste and many forms that were not allowed to develop earlier are becoming quite popular, although even today certain classes are more widely grown than others. Yet the seed of change is present. For instance, since the war the giant decoratives have held the prime place of honour, but at the present time it is becoming fairly obvious that the smaller varieties are rapidly overtaking these in popularity. The medium and small cactus in particular are being grown in increasing numbers each year.

There is a great deal to he said in favour of this change because the smaller bloomed varieties are most attractive in the garden. They bloom early, have a very wide range of colour and are extremely free flowering. They are ideal in fact for the small garden where each plant has to play such a large part in the colour scheme. Then too they are ideal for use as cut flowers for house decoration, lasting quite well in water and supplying a constant stream of replacements.

Apart from this, different forms are also attracting the breeder, one of the most attractive being the deeply fringed cactus, of which Dentelle de Venise and Frills are outstanding examples. Then a chrysanthemum-like flower is being evolved, and this may also become popular. Orchid flowered types (in which the florets are involute, rather than revolute, so that the reverse colour is seen) have been known for manyyears but today theyseem to be enjoying more attention than they have ever attracted before. As nearly all these variations have blooms of comparatively small size, there seems to be no reason why some, if not all of them, should not become widely grown.
